Wrinkled peas are grown primarily as vining peas, to be harvested immature and fresh for freezing. If the narrow optimum harvest window is missed, the peas are "by-passed" and typically left to be ploughed back into the field or at best harvested for animal feed. But wrinkled peas have excellent eating quality when harvested dry with a distinctive fresh and grassy flavour. They also bring additional nutritional benefits, containing twice the level of resistant starch as other dried peas. The other main ingredient is Wholemeal Rye Flour. As a less common and lower input cereal in arable rotations, rye helps reduce negative impacts and increase the diversity of British arable rotations. By using wholemeal flour, the waste bran produced from production of white flour will be avoided while providing the nutritional benefits of the whole grain.

We minimise packaging, carefully select the materials used in that packaging and reduce waste generated through our processes and elsewhere in our supply network. We seek to inspire innovation by showing the uses, value and benefits of crops from diverse rotations, especially underutilised legume crops that reduce total farm inputs. By putting pulses at the centre of rotations and plates we seek to reframe farming and diets to effect wider system change.
